Anyway as I anticipated losing power and praying that my car wouldn't be smushed by a tree, I spent my day off from work indoors. I kept myself busy in the kitchen, just like last year when I was trapped indoors because of crazy weather in Houston.
First, I stocked up on fresh veggies so I could christen my new birthday present: my green immersion blender (Thanks, Big Sista). Twin Sista passed along this recipe for Roasted Vegetable Soup and I couldn't wait to buy leeks and parsnips for the first time. You could potentially purchase any type of root vegetable and make this hearty and tasty soup. Loved the blender and loved the soup. It's a good way to pack in a bunch of vegetables into one dish. I feel so healthy!
I also (no surprise) made my fourth pumpkin recipe of the season. This time I googled pumpkin chocolate chip cookies since there is nothing better than a simple chocolate chip cookie (with some added pumpkin). Googling took me to the Food Network's website and to this recipe. I also bought fresh and new cinnamon and nutmeg and am happy to report that these cookies had the right spicy kick from them. Hooray!
These were totally my-kind-of-cookie: soft and reminiscent of the Toll House chocolate chip cookie flavor. I like the balance between pumpkin and regular cookie flavor of this cookie. But if you like an extra punch, the reviews for the recipe say to double the amount of pumpkin and spices.

On a side note: I didn't lose power and my car is safe. Phew!
