Simple Post: I baked a really great cake and here's what it is.
The recipe is Apple Cider Doughnut Cake from Serious Eats and it was my one time to throw in some apples into my baking before I hit the Christmas flavors of ginger, mint and molasses next month. It was meant to be because it combines two loves: old love-bundt cakes. new love-baked doughnuts.
I'm really not one to brag but I'm going to because this cake came out fantastic! I was convinced I overbaked it because my cake tester came out clean (normally I'll like a few stray crumbs on it). After coating it with some cinnamon sugar and waiting patiently for it to cool, I was pleasantly surprised with the most perfectly moist cake. The stars aligned and I had baking success!
So if you have a bundt pan, I would bake this ASAP. It's a bit mild in apple flavor but it doesn't matter because it's simply a perfectly pleasant cake. Great for breakfast, a snackie or dessert. Yum.
On a side note: This recipe calls for ground mace, which is from the outer covering of nutmeg. McCormick produces it but I decided to pass on purchasing some and just substituted extra nutmeg. Ground cinnamon, allspice, or pumpkin pie spice suffices too.
